Funny you mention messy (and dirty) kitchens. When I was doing master’s studies at Clemson, I had a Chinese friend for whom I typed papers. He offered to pay me, but I told him I wanted him to teach me Chinese cooking. Well, he taught me in what had to be the dirtiest kitchen I ever had seen, yet the food was great.

I can guarantee you that while the kitchen was dirty, the food was not a “health threat” to any of us. The whole thing is ridiculous, but bureaucrats specialize in being ridiculous.
