As hand-made Parmesan cheese has gotten more and more expensive, fewer and fewer people are buying it. So in order to override people's choices, the Italian state is taxing them to bailout the industry's well-to-do owners and manual workers. After all, ancient production methods must be coercively kept in existence. Here's another economic stimulus idea: the state can build another Colosseum, using the construction techiques of the first century AD. Surely those should be forcibly preserved as well.
